At Baraco Restaurant, authentic Vietnamese cuisine is served with a view of the bay. It’s open throughout the day for breakfast, lunch and dinner. There are three bars to choose from, each with their own vibe and menu, from poolside drinks to swim-up cocktails and whisky nightcaps. There’s also a café and some incredible private dining experiences that come with a personal chef and butler.
All-day restaurant Bacaro has an atmospheric feel, with its soft lighting and intricate décor. Chefs here use locally-sourced ingredients to create a menu of fresh and vibrant dishes from Vietnam’s three regions. You can find your caffeine fix at Coffee Corner, or head to one of the resort’s three bars if it’s a cocktail you’re after. Lobby Bar has a collection of rare single malt whiskies and premium wines, Pool Bar is great for daytime drinks and bites, and Lagoon Bar has a private pool for swim-up snacks and signature cocktails. After meeting up with the chef at Lanterns Restaurant, you’ll hop on a cyclo - a typical three-wheeled bicycle taxi - for a fascinating trip to a local produce market. Here you’ll get a colourful lesson in the ingredients that are key to the country’s culinary culture and how to choose and haggle for the best, pausing for a refreshing sugar-cane juice along the way. On returning to the restaurant, you’ll be taken through the necessary steps to create a three-course meal, starting with fresh spring rolls, perhaps, followed by lemongrass chicken or fish cooked in a clay pot depending on what’s on the menu that day. You’ll also discover the secret of cooking perfect rice and how to flambé fruit for an impressive dessert without setting anything else on fire.
